1. Make your Healthy Chunky Monkey
To make your imitation ice cream:
First, mash up your banana. You want to use a ripe banana for this, overly ripe is even better.
Once mashed, add in your light whipped cream. This part takes a little bit of elbow grease. To be honest, I used my immersion blender the first time I made this. It worked great! You can do it either way. A normal blender probably won’t work as well because there’s not enough liquid to blend it together and force the ingredients around.
Crush your walnuts up with the back of your measuring spoon for a smaller crunch to be distributed throughout your faux-cream.
Fudge chunks at the grocery store are SO expensive! I was pretty stunned to see they wanted $7 for a bag at my grocery store. Instead of doing that, I grabbed a baking bar that was on sale for $3 and used one square of the chocolate. I shaved it with my knife, cut the shavings in half, and mixed them in.
You want to toss this in the freezer until it’s frozen. If you leave it in and forget about it, that’s ok! You’re going to need to microwave it for 10-20 seconds to get it scoop-able. Then enjoy!
